Maple Squash

  • Maple Squash
  • Winter Squash
  • Maple Syrup
  • Butter

Peel and slice or cube squash.

Cook, drain, and mash.

Add 2 tbsp. maple syrup and 1 tbsp butter for each medium squash used.

Season with salt and pepper to taste.

Microwave cooking method:
Pierce squash several times.
Microwave on high for 8 minutes.

Oven cooking method:
Cut squash in half along length.
Clean, seed, and pulp.
Spread two tbsp. maple syrup and 1 tsp. butter on each half.
Bake at 375 degrees F. for 45 minutes or until soft.

Candied Sweet Potatoes

  • 1 large can or 6 medium Sweet Potatoes
  • 2/3 cup Maple Syrup
  • 3 tbsp. Butter
  • 1/4 cup Water
  • 1/4 tsp. Nutmeg

Preheat oven to 350 degrees F.

If using fresh potatoes, wrap potatoes in foil and bake until tender.

Let cool and cut lengthwise, place in buttered baking dish.

If using canned potatoes, drain and arrange in baking dish.

Pour mixture of maple syrup and water over potatoes

Place pats of butter on top of potatoes and sprinkle with nutmeg.

Bake 30 minutes or until tender, turning as necessary.

Maple Carrots

  • Maple Carrots
  • 8 medium Carrots, sliced
  • 3 tbsp. butter
  • 1/4 cup Maple Syrup
  • 1/4 tsp. ginger, optional

Cook carrots until tender and drain,

Add maple syrup, butter, and ginger if desired.

Simmer in syrup and butter mixture until glazed.

Maple Sides

Maple Baked Beans

  • 2 lbs. dried Beans
  • 1/2 lb. salt pork if desired
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. dry mustard powder
  • 1 medium onion, peeled and sliced
  • 1-1/2 cup Maple Syrup

Soak beans overnight in water and baking soda mixture. Use enough water to cover the beans x2. Try not to let the beans soak long enough to split.

Rinse beans and boil until skins wrinkle.
Drain beans but retain water.

Place onion, beans, and remaining ingredients at bottom of a bean pot.

Score the salt pork and place on top of beans if desired.
Pour in retained water to just cover the mixture.

Cover and bake at 325 degrees F. for about 8 hours checking periodically and adding bean water as necessary.

Let bake uncovered for about last hour to brown on top.
